I N T R O D U C T I O N
e are living in an amazingly fertile period of scientific discovery. Technology-driven advances in electronics, telecommunications, and medicine have given us the ability to lead longer, more comfortable, more diverse lives. Breakthroughs in molecular genetics and particularly in mapping the human genome promise to revolutionize our understanding of disease, especially in terms of early detection, treatment, and prevention. I have specialized in cancer research and nutrition for thirty-five years. Early on, I had a glimpse into the powerfully protective world of phytochemicals; it was all the reinforcement I needed to make it my life s work. Over the years, I have held a number of important posts in cancer research organizations up to and including my present position as scientific director of the AMC Cancer Research Center, a Denver-based research and educational institution studying cancer since 1954, and deputy director of the University of Colorado Cancer Center. I have conducted seminars and review panels at the National Cancer Institute and the Environmental Protection Agency among others. (Incidentally, on September 11, 2001, I was across the street from the White House at a meeting of the FDA- and industry-supported Cosmetic Ingredient Review Board when tragedy struck the Pentagon.) I have cataloged the results of my research in hundreds of papers published by the most prestigious scientific journals. My work on green tea and red grapes, for example, both of which are at the forefront of research today, helped to forge our understanding of the health benefits of the plant compounds they contain. Despite the mounting evidence, most of us still pay little attention to how diet, lifestyle, environmental factors, and the complex interactions of our genes can affect our health and well-being. Many risk factors have been identified that increase the chance of developing various known diseases. Approximately 80 to 90 percent of all cancers, for example, are related to (a) the use of tobacco products, (b) what we eat and drink, (c) exposure to sunlight and ionizing radiation, and (d) exposure to
