Science has answered our modern needs with processed, preserved, and packaged convenience foods. Unfortunately it has done so at the expense of our health. That s why the traditional diets of our ancestors are so instructive today even if we can t fully implement them anymore. The rates of cancer and other degenerative diseases are lower in countries where people observe more traditional diets and eat in moderation. It s as simple as that.

My Polish and German grandparents ate a variety of fruits, vegetables, beans, and whole grains. They ate meat in small amounts because it was expensive. As a nutrition scientist, I have seen the clear health benefits of eating this way. Cabbage rolls, for instance, one of my grandparents favorite meals, contained rice, onions, garlic, tomatoes, some meat, and paprika. The health benefits of these ingredients are outstanding. Let s take a look.

Cabbage contains several sulfur compounds, indoles, and D-glucarate, which we now know are important to countering the effects of toxins. D-glucarate, in particular, rids the body of both tumor-initiating and tumor-promoting chemicals from the environment as well as potentially carcinogenic and/or cancer-promoting steroidal hormones.

Whole grains such as brown rice contain beneficial fiber, vitamins, and minerals, as well as ferulic acid, which helps to induce Phase I and Phase II detoxification; and phytic acid, also called inositol hexaphosphate (1P6), a compound with strong anticarcinogenic and immunityenhancing properties.

We have seen that people with diets high in onions and garlic have lower rates of many different kinds of cancer such as skin, esophageal, stomach, colon, liver, lung, and cervical. This is in part due to the fact that
INSIGHTS FROM TRADITIONAL DIETS
the plant chemicals in onions and garlic have properties that block dangerous nitrosamines, which can form in the stomach as the result of eating cured meats.
Tomatoes
The antioxidant compound lycopene, which is abundant in tomatoes, has extraordinary ability to protect against cancers of the prostate and breast.
Meat
My grandmother added a small amount of lean pork or beef to the rice. This was enough meat to provide the amino acids necessary to produce glutathione, an antioxidant central to several important enzymes required for proper detoxification function. Any more meat and the benefits would have been offset with the consumption of too much saturated fat. (Not that she necessarily knew any of that but she knew it was economical.)
Paprika
Paprika is a potent antioxidant spice that helps to neutralize free radicals and support proper detoxification function. My grandmother used paprika to flavor vegetables, salads, and meat. So you see, this old family recipe for cabbage rolls has foods rich in essential nutrients and protective plant compounds to help the body s detoxification system reduce the risk of cancer. My parents continued this tradition. As a child, I remember eating a lot of fruits and vegetables. We had apple, cherry, and peach trees on our property and a garden of tomatoes, cucumbers, asparagus, beans, potatoes, peas, corn, peppers, cabbage, broccoli, cauliflower, blueberries, raspberries, strawberries, and rhubarb. And we gathered wild mushrooms as well. Ritually, my mother saved the flavonoid-rich cooking liquid from vegetables as a stock for soup, and she canned fruits and vegetables for the winter. This was a pretty common way for people to live, until the advent of fast foods. Today, my folks still have a pretty good-size garden and, thankfully, a great deal of vitality despite the fact that they are now in their eighties.
THE DETOX REVOLUTION
M ORE THAN THE S UM OF I TS PARTS
Scientists involved in nutrition research are aware that plant compounds behave synergistically in supporting each other s specific detoxification responsibilities. In other words, together they act more beneficially than any of them would on their own. A recent area of nutrition research at AMC Cancer Research Center is the study of the benefits of people eating many different fruits and vegetables instead of just adding one healthy food or nutrient to their diet. In addition to providing a good balance of nutrients vitamins, minerals, phytochemicals, and essential fats we are seeing that variety is the key to detoxification.
