After three months you will be on the way to better health and disease prevention. Level III is about maintaining and then building on success. Furthermore, a healthy lifestyle will interact synergistically with your good genes to give you additional benefits for a longer and healthier life.

What You Need to Know and Have
hen I give talks on health, the one question that comes up over and over again is What do you eat I can understand the curiosity and the assumption that a good nutrition researcher ought to practice what he preaches. And I do. That s why the recipes, many of which are my own, make up such a large part of this book. The recipes are divided into sections such as soups and pasta dishes. We ll begin with the recipes for the first meal of the day.
Breakfast Is Still the Most Important Meal
At AMC we don t believe in skipping meals and this is particularly important when it comes to breakfast. The fact is we need a continual supply of nutrients to help break down and eliminate toxins and to support the genes that protect against disease. Eating smaller portions of food throughout the day starting with breakfast gives your body the lifesaving nutrition it needs. The toxins to which you may have been exposed on your drive home from work have a better chance of being detoxified if you replenish your system with the nutrients it needs starting at breakfast the following day. Do not confuse skipping a meal especially the first meal of the day with some form of fasting. Skipping

meals is not a good thing for cleansing the body. We need nutrients to properly do that job. In addition to the breakfast recipes in the next chapter, here are some simple suggestions for a complete breakfast:
