Cover with a bamboo mat and continue to simmer until beans are just about soft, another forty to fifty minutes. Remove the pan from the heat, drain, transfer the beans to a bowl, and let cool. Crush the beans a little to break skin. This will help the dressing s flavors to adhere to the beans. Whisk together mustard, lime juice, oil, water, and sea salt. In a suribachi, grind and press garlic into the other sauce ingredients. Slowly add the cilantro and mix well. Toss the dressing with the peas. Serve on lettuce leaves or radicchio.

Lightly Blanched Salad

Place several inches of water and a pinch of salt in a pot and bring to a boil. Drop in the vegetable(s) requiring the longest cooking time. A minute or two later add the rest of the vegetables. Remove the vegetables quickly and place into a strainer. Season with lemon, soy sauce, and oil and serve.
When boiling vegetables lightly, or blanching as it is called, add the vegetables that need the most cooking first. For example, when preparing the Lightly Blanched Salad, you would add carrots to the pot before the collard greens.
PAILLARDS OF TURKEY WITH PEA, HERB, AND CHILI SALAD

3 cups shelled peas or 1 package frozen peas 2 teaspoons chopped fresh parsley 11 2 tablespoons chopped fresh cilantro + extra for garnish 3 tablespoons chopped fresh mint 1 hot chili pepper, stemmed, seeded, and minced 3 scallions (green part only), sliced thin 1 2 teaspoon sea salt 1 teaspoon canola oil 1 pound skinless turkey breast, sliced into four pieces 2 cups mixed butter lettuce and arugula, cleaned Juice of 1 lime Blanch the peas in boiling salted water for one minute. Drain and rinse under cold running water. If using frozen peas, cook according to instructions, but don t overcook. Toss the peas with parsley, cilantro, mint, chili, and scallions. Salt lightly. Set aside. Heat oil in a heavy iron skillet. Salt the turkey slices and saut until done, about 11 2 to 2 minutes on each side, depending on the thickness. On each of four plates, arrange arugula and lettuce. Add the pea mixture on top of lettuce and arugula. Place a piece of turkey on each serving and top with a generous squeeze of lime juice. Garnish with fresh chopped cilantro.
